I did have to make a couple changes: I used ginger paste (shame shame I know) jar garlic (8 cloves is a lot to mince sister) and store bought lemon juice. I did put a pinch of salt in the water to boil the collards and I doubled the tumeric and allspice I also was stationed in Asmara as an army brat and was introduced to zigni and injera. My mother still made zigni when back in US. Can’t wait to try it myself. Took a while to find the correct spice to buy, but see it is available. It was always called zigni powder by those who served it to us. She was horrified; apparently, lumpy shiro is a telltale sign of an inexperienced cook in Ethiopia 🙂 So just whisk like crazy when you’re adding the shiro, and add water or oil to smooth it out if it’s getting too lumpy or thick. Heat until the shiro begins to pop (simmer). Then add the niter kibbeh, garlic powder, sugar, and salt to taste, stirring until combined. Simmer for about 5-10 minutes over low heat until the flavors combine and the oil separates slightly from the shiro Ferment the shio koji at room temperature, mix it once a day for 1 week during summers and 2 weeks during winters (as warmth temperature speeds up the ripening process).
